What is the best recipe for pancake day?
It’s pancake day tomorrow – or Shrove Tuesday to be precise – and we’d like to hear about your favourite recipes for the batter treats and their toppings.
Shrove Tuesday is the traditional feast day before the start of Lent – the 40 days leading up to Easter and a time of fasting.
Pancake day was designed to use up rich, fatty foods like eggs, milk, and sugar before the 40-day fast. It has a long history and was first mentioned in cookery books as far back as 1439.
To get you in the mood we’ve included a recipe from the Lincolnshire Co-op for banana oat pancakes below – can you top it?

Ingredients
- 1½ cups oats
- 1 cup milk (soy or dairy)
- 1 banana
Method:
- Blend oats → flour.
- Blend with banana + milk (can be dairy or dairy free alternative).
- Rest batter 5–10 min.
- Cook in lightly oiled pan.
Uses whole ingredients and can avoid added salt or baking powder to keep sodium low.
